Caring for Your Mushrooms and Mushroom Logs

Store your mushrooms right away in a plastic container or brown paper bags and refrigerate. If they dry out, just soak them for 30 minutes, and they'll bounce right back. You can blanche or saute mushrooms and then freeze them, and they'll stay tasty and tender for months. Mushrooms also dry great in food dryers and last for a year if stored in an airtight container. You can also air dry them but watch out for molding during the process.
